Macadamia Nut and Blueberry Muffins

Ingredients:

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup dried blueberries
  • 1/2 cup macadamia nuts, chopped
Instructions:
  • Preheat your oven to 190°C. Line a 12-cup muffin tin with paper liners or grease with cooking spray.
  • In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
  • In a separate mixing bowl, whisk together the melted butter, milk, eggs, and vanilla extract until smooth.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix the batter.
  • Fold in the blueberries and macadamia nuts into the batter.
  • Divide the batter evenly among the muffin cups, filling each cup about 3/4 of the way full.
  • Bake for 18-20 minutes, or until the muffins are golden brown and a toothpick inserted into the centre of a muffin comes out clean.
  • Allow the muffins to cool in the muffin tin for 5 minutes before transferring them to a wire rack to cool completely.
  • Serve warm or at room temperature.
