Grilled Zucchini with Sumac Recipe

With its tender, grilled zucchini slices bursting with the flavours of tangy sumac, olive oil, salt, and pepper, this dish is not only mouthwatering but also packed with nutrients. Ingredients:

  • 2 medium zucchini
  • 2 tablespoons olive oil
  • 2 teaspoons sumac
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish (optional)
Instructions:
  • Preheat the grill to medium-high heat.
  • Wash and trim the ends of the zucchini. Cut them lengthwise into thin slices, about 5mm thick.
  • In a small bowl, whisk together the olive oil, sumac, salt, and pepper.
  • Brush both sides of the zucchini slices with the sumac mixture.
  • Place the zucchini slices on the grill and cook for 2-3 minutes on each side, or until they are tender and grill marks appear.
  • Remove the zucchini from the grill and transfer to a serving dish.
