Ingredients:

  • 1 cup yellow lentils (toor dal), rinsed and drained
  • 4 cups water
  • 1 tbsp vegetable oil
  • 1 tsp cumin seeds
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tbsp grated fresh ginger
  • 1 tsp ground turmeric
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground cardamom
  • 1/2 tsp salt
  • 1 tomato, chopped
  • 2 tbsp fresh coriander, chopped
  • 1 tbsp unsalted butter or ghee

Instructions:

  • In a medium saucepan, combine the lentils and water and bring to a boil. Reduce the heat to low and simmer, covered, until the lentils are tender, about 25 minutes. Stir occasionally and add more water if needed.
  • In a large saucepan, heat the oil over medium-high heat. Add the cumin seeds and cook for 1 minute, until they start to sizzle.
  • Add the onion and cook for 3-4 minutes, until softened.
  • Add the garlic and ginger and cook for 1 minute, until fragrant.
  • Add the turmeric, coriander, cumin, cinnamon, cardamom, and salt and cook for 1 minute, until fragrant.
  • Add the chopped tomato and cook for 2-3 minutes, until the tomato is soft.
  • Add the cooked lentils (including any remaining liquid) to the spice mixture and stir to combine.
  • Add the chopped coriander and butter or ghee, and stir to combine. Simmer the dal over low heat for 10-15 minutes, stirring occasionally, until the flavours have melded together and the dal has thickened to your desired consistency.
  • Serve the dal hot with steamed rice or naan bread, garnished with additional chopped coriander if desired.
