- 1 cup yellow lentils (toor dal), rinsed and drained
- 4 cups water
- 1 tbsp vegetable oil
- 1 tsp cumin seeds
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tbsp grated fresh ginger
- 1 tsp ground turmeric
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1/2 tsp ground cinnamon
- 1/2 tsp ground cardamom
- 1/2 tsp salt
- 1 tomato, chopped
- 2 tbsp fresh coriander, chopped
- 1 tbsp unsalted butter or ghee
- In a medium saucepan, combine the lentils and water and bring to a boil. Reduce the heat to low and simmer, covered, until the lentils are tender, about 25 minutes. Stir occasionally and add more water if needed.
- In a large saucepan, heat the oil over medium-high heat. Add the cumin seeds and cook for 1 minute, until they start to sizzle.
- Add the onion and cook for 3-4 minutes, until softened.
- Add the garlic and ginger and cook for 1 minute, until fragrant.
- Add the turmeric, coriander, cumin, cinnamon, cardamom, and salt and cook for 1 minute, until fragrant.
- Add the chopped tomato and cook for 2-3 minutes, until the tomato is soft.
- Add the cooked lentils (including any remaining liquid) to the spice mixture and stir to combine.
- Add the chopped coriander and butter or ghee, and stir to combine. Simmer the dal over low heat for 10-15 minutes, stirring occasionally, until the flavours have melded together and the dal has thickened to your desired consistency.
- Serve the dal hot with steamed rice or naan bread, garnished with additional chopped coriander if desired.
