  • Season with salt and pepper to taste.

Couscous is a staple food in many North African and Middle Eastern countries, particularly Morocco, Algeria, Tunisia, and Libya. The exact origin of couscous is unclear, but it is believed to have been invented by the Berbers, an ethnic group indigenous to North Africa, over a thousand years ago. It is thought to have spread throughout the region during the Arab conquests of the 7th and 8th centuries. Traditionally, couscous is made by rolling and shaping moistened semolina wheat into tiny pellets, which are then steamed. Today, it is also available in an instant form, which requires only a few minutes of cooking time. Couscous is incredibly versatile and can be prepared in a wide variety of ways, ranging from savoury dishes like stews and tagines to sweet, dessert-like preparations. Over the years, couscous has become increasingly popular in Western countries, where it is often used as a base for salads or served as a side dish. With its light and fluffy texture, nutty flavour, and ease of preparation, couscous is a versatile and beloved ingredient in kitchens around the world.
