Classic Apple Pie with a Dried Apple Twist

There's nothing quite as comforting and delicious as a freshly baked apple pie, and this recipe takes it to the next level with the addition of diced dried apple. The dried apple pieces add an extra burst of sweetness and a chewy texture that complements the tender, flaky crust and fragrant cinnamon spice. Ingredients:

For the crust:

  • 2 1/2 cups all-purpose flour
  • 1 tsp salt
  • 1 tsp sugar
  • 1 cup unsalted butter, chilled and cut into small cubes
  • 1/4 to 1/2 cup ice water

For the filling:

  • 2 cups diced dried apple
  • 1/2 cup brown sugar
  • 1/4 cup all-purpose flour
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground allspice
  • 1/4 tsp salt
  • 2 tbsp unsalted butter, melted
  • 1 tbsp lemon juice
  • 1 egg, beaten
  • 1 tbsp coarse sugar (optional)

Instructions:

  • To make the crust, combine the flour, salt, and sugar in a large bowl. Add the butter and use a pastry cutter or your hands to mix until the mixture resembles coarse crumbs.
  • Gradually add the ice water, 1 tablespoon at a time, mixing with a fork, until the dough comes together and forms a ball.
  • Divide the dough in half and shape each half into a disk. Wrap in plastic wrap and chill in the refrigerator for at least 30 minutes.
  • Preheat the oven to 190°C.
  • To make the filling, combine the diced dried apple, brown sugar, flour, cinnamon, nutmeg, allspice, and salt in a large bowl. Stir in the melted butter and lemon juice until well combined.
  • Roll out one of the dough disks on a lightly floured surface and transfer it to a 9-inch pie dish. Trim the edges and prick the bottom with a fork.
  • Pour the apple mixture into the pie crust.
  • Roll out the second dough disk and cut into strips. Arrange the strips on top of the filling in a lattice pattern.
  • Brush the beaten egg over the top of the pie and sprinkle with coarse sugar (if using).
  • Bake the pie for 45-50 minutes, or until the crust is golden brown and the filling is bubbling.
  • Allow the pie to cool for at least 30 minutes before slicing and serving.
